Why do half & half singles curdle when I add it to my coffee?

Sometimes the acid in coffee along with the coffee’s heat may tend to curdle the cream when it is added to coffee if the cream is not fresh. To prevent this from happening, be sure to use fresh cream... not the Land-o-Lakes ultra-pasteurized-so-don't-bother-with-refrigeration stuff.
